Pierre Gimonnet 2004 Fleuron Brut Champagne. The 2004 Brut Cuvee Gastronome opens with gorgeous, explosive aromas that lead to a core of perfumed apples and pears. The wine is all about clarity and precision, both qualities it has in spades. The Cuvee Gastronome is made in the Cremant style, and is a blend of fruit sourced from three villages; Chouilly (50%), Cuis (40%) and Cramant (10%). This bottle was disgorged Nov 16, 2007. Anticipated maturity: 2008-2011. 90 Points Wine Advocate, December 2008. Pale, bright yellow with a strong mousse. Spicy, talc-laced lemon and lime aromas are complicated by pungent herbs, anise and jasmine. Fresh and incisive, offering nervy lime, quince and green apple flavors. Gains power and depth with air while retaining vibrancy and impressive delineation. Finishes clean and dry, with lingering honeysuckle, floral honey and mineral notes.
